Homemade sushi is really easy to do and there are some great vegan substitutes to make your former “non vegan” favorite rolls if you have recently transitioned. Also, if you have kids, add it into your next family nights activities, they will love it -here’s how!
Ingredients:
6 Sheets of sushi seaweed/ nori
1 batch of prepared sushi rice (2 cups of rice, 2 cups of water, sugar, salt, and some Rice Vinegar)
1 container of vegan cream cheese (VioLife is one of my favorites)
Sliced Carrots and Cucumbers
Optional* (but delicious) Toss’ables Garlic and Herb Tofu

A Sushi Bazooka and Bamboo Rolling Mat
The process to make the sushi is really easy!
First you will lightly oil the inside of the sushi bazooka so the rice doesnt stick.
Next- Pack 1/2 cup of Sushi rice mixture into one half of the Bazooka and repeat with another 1/2 cup into the other half, again making sure the plunger rod is in the screw thread position.
Lift out the center rod and lay it in the middle of one half of the rice. Press firmly down, making sure that the end plate is in position at the screw thread end. Repeat for the other half. This will provide a neat empty row down the middle of the rice where you can place your choice of fillings.
Replace the center rod at the screw end of the Bazooka. Close the two halves slowly and gently together and clip the latches shut. Next place the end cap on and twist the shaft to compress the shape.
Lay the nori sheet, shiny side up on the bamboo mat
Remove the end cap on the Bazooka and push the sushi roll out by twisting the shaft
Roll the bamboo mat up with the nori to cover the rice. Once its rolled seal the roll by lightly moistening one end of the nori.
Cut the sushi into slices and serve.
